Glutathion

(GSH) ist ein Antioxidans in Pflanzen, Tieren, Pilzen und einigen Bakterien und Archaeen. Glutathion ist in der Lage, Schäden an wichtigen Zellbestandteilen zu verhindern, die durch reaktive Sauerstoffspezies wie freie Radikale, Peroxide, Lipidperoxide und Schwermetalle verursacht werden. Es ist ein Tripeptid mit einer Gamma-Peptid-Bindung zwischen der Carboxylgruppe der Glutamat-Seitenkette und Cystein. Die Carboxylgruppe des Cysteinrests ist durch normale Peptidbindung an Glycin gebunden.
